Oregano is a great perennial culinary and medicinal herb. It has long been recognized as one of the "functional foods" because of its nutritious, antioxidant and

disease prevention properties. Oregano means "joy of the mountains" in Greek, is native to the Mediterranean region.

Botanically it belongs to the mint family (Lamiaceae), in the genus Origanum and is scientifically known as Origanum vulgare. The small oregano shrub grows up to

75 cm high with small grey-green oval leaves and small white or pink flowers. The leaves have a distinct aromatic, warm and

slightly bitter taste which intensity varies. For example, a good quality oregano is so strong that it almost numbs the tongue.

However, the influences of climate, season and soil have a greater influence on the composition of the essential oils than biodiversity.

Origanum heracleoticum is another Greek variety that has an unmistakable pungent smell and taste.
