The pine and thyme honey that has been produced in Crete for more than a century is the product of the natural mixture of pine with thyme honey, through a special, long-lasting traditional process used in the selective harvesting of the hives, the reduction of insects in the pine trees and the regeneration of their population in autumn.

The color of this special honey is darker than thyme honey and lighter than pure pine honey.
