SMARI pine honey, 290g
It is produced in the pine forests around Kalamafka near Ierapetra.
It accounts for 65% of the total production of Greek pine honey and is produced from the honeydew effluvia of an insect called Archalina Hellenica, which infests Allepo pines and Pinus Brutia pines.
Color
Pine honey is darker than thyme honey. The honey harvested in spring is slightly lighter and clearer than the autumn harvest.
Fragrance - Taste
Pine honey has a characteristic fragrance and a thick texture, due to the low sugar content. It is not very sweet.
Nutritional value and beneficial properties
Pine honey, and Greek pine honey in particular, owes its high nutritional value to a wide variety of trace elements.
Pine honey is known for its antiseptic and tonic properties.
Crystallization
Pine honey crystallizes very slowly after 24 months, because the glucose content is very low.
